Why is nutrition information always so hard to discern? Are seed oils bad? Should you do IF? Which meal is the most important? Not that these questions are where I’m confused, just it’s so hard to tell what’s worth following and what’s not.

I think it’s up to everyone to find their path… cultural choices were historically varied and dependent on both supply and need - regional variations existed. Convenience has dominated the western diet for decades and decades. Thought Pollan was pretty spot on with this at the time. Complicating our current discussion is the factor of cost (financial or time) in sourcing and preparing quality foods, which aren’t dependent on chemists for flavors. https://michaelpollan.com/reviews/how-to-eat/

I take a picture of the label, run it through copilot, and then ask “are any of these ingredients banned in other countries.” I have been finding at least three ingredients average that are banned in three or more countries. Then I ask why? Then I make a decision. I will never eat anything at 7-11. Even the sandwiches have BhA.

imo its because food is highly personal and we form identities around it hence breaking into many different camps (how dare you attack my cuisine etc) think bottom line is mainly look at macros. we are usually over- not undernourished.
