peach cobbler with a brown sugar and oat crumble peach ice cream poached peaches pavlova with peaches & cream (i like to macerate the peaches with lemon juice and pepper) i've also done a savoury peach puree for lamb meatballs (herbed with a combo of mint, rosemary, thyme, sage, and/or oregano) i grew up with a peach tree in my backyard :)

+1 for cobbler or pie. Cooking them in a honey simple syrup until tender and storing in the fridge can allow you to eat them for months.
