perhaps my only stereotypically canadian quality is that I buy and use maple syrup on a regular basis for cooking.

very useful for certain roasted veg, marinades, glazes, almost anything.

okay continuing this maple theme, tried adding some maple condensed milk (!!!) to a latte today and it was quite good

ok so take one of those cans poke a hole in the top (remove the wrapper) and put it on the stove on low/med heat till it changes color (carmelizes)

the company that makes it is definitely into foie gras, they run a french (ish) restaurant called Au Pied du Cochon and a few others

it works really well as a caramel-ish drink syrup, slightly thicker than your average simple or rich syrup.

a friend brought in some maple
cones. i think maybe they were topped with this? the top was much more my speed than the literal syrup below it (wasn’t expecting)
