currently visiting JP and my wife keeps falling back on her usual habit of searching for highly rated 4.5+ restaurants on google im like "babe let's 80/20 this, any sushi over 3 stars is gonna be 10x better than anything we've had in America in the last 5y"

That's because 5/5 means that a place visited a lot by foreigners, Japanese people don't leave 5/5. It's a part of the culture :) Modesty and humility are the top standard so it's even considered rude to leave 5/5 for a native.
