Thanks! My understanding is that if the starter was a bit more mature the dough would rise more and it’d turn out more airy inside but my line of thinking there could be wrong

that’s a very nice crumb for a first loaf! I think you got really decent rise. not as much of an “ear” on the score as I’d expect for such a nice rise… did you bake it in a dutch oven? if not, did you use steam?

You could also need more time on the bulk fermentation stage. Is it colder there right now? It's freezing here and I don't have a proofing oven so it takes much longer to fully develop. Had the exact same problem on my last batch.

Yes it definitely will, a rule of thumb for testing is if it floats in water before you go to mix. If you have any questions regarding feeding/recipe/procedure just shoot me a dm and possibly I can help.
