There’s a wonderful German website maintained by a geologist on sourdough bread. It was my go-to resource for baking bread. Scientific mindset in the kitchen. When conference season starts, are you gonna travel with your starter? I left mine at home and it died

did you do it in a pot of just straight into the oven? I always get it way more consistent when in a pot. Keep at 250C for 40 min with lid on then about 15 min with lid off or with temp check until inside is about 100C

Looks great! how was the crumb when you sliced it? I like to use a 50/50 white/rice flour dusting mixture which gives nice contrast on the crust (especially if you bake it well-done and very dark)
