Awwww, sweet! I love cooking Risotto too!
Here’s one I made the other night that we call “Risotto de Queijo Coalho com Carne Seca” which is a Brazilian twist on the classic Italian risotto.
It features creamy risotto, flavored with 'queijo coalho,' a traditional Brazilian cheese that's similar to a firm mozzarella, but with a mild, slightly salty taste and the ability to hold its shape when cooked. Additionally, I mix it with 'carne seca,' which is a type of Brazilian dried and salted beef, similar to American jerky, but with a unique, rich flavor.
