pineapple on pizza just makes culinary sense: you need both acid and sugar to balance the other flavors why do you think they put balsamic on pizzas? it’s science.

Makes theoretical sense but in practice, it fails because pineapple doesn’t bake well. It becomes mushy, losing a lot of its acidity and creating a strange, somewhat cold texture which decimates the mouthfeel. You could perhaps make an argument for grilled pineapple but now we’re venturing into the realm of subjectivity, which has no place in a debate.

I love thin fresh pineapple with prosciutto! It caramelizes so nicely! I’m also super into honey with 4 cheese pizza lately!
