fridge photos should be a genre/channel! Looks epic, I never tried a dry brine. How was it? I am sure skin carmalized really well by not adding so much water and drawing out liquid instead. 

gonna start roasting in a couple hours (i do a delayed thanksgiving on saturday as it's not a public holiday here in france 😆)
