Stainless steel is the most versatile, my choice if I could only have one pan, Made In and Tramontina both good

Carbon steel and cast iron are similar but I would say carbon steel is easier to maintain, Made In and Lodge both good

Would recommend a stainless steel from Made In or Tramontina as a daily driver (things won't stick as long as you preheat it) and also a carbon steel (my preference) or cast iron for high heat cooking cc @linda

I second this.  The issue is expecting a thin non-stick coating to last.
