so does anyone know why we are able to consume unlimited caffeine?

Interesting! Maybe this is a me thing because my caffeine consumption has extreme upper bounds 😅

I do not have this super power. 
I’m exact opposite. Useless if I over consume (more than one shot AM)

My understanding, beyond just the simple metabolism factor (some ppl metabolize it faster) is that some ppl have a mutation that makes the receptor caffeine binds to a "double node" so there's still room for adenosine to bind as well. 

So basically caffeine is less effective for ppl with this mutation. They can drink coffee and go straight to sleep.

Not sure.

I sometimes feel slightly more dissociated after the 3rd or 4th cup. But it won't stop me.
