so does anyone know why we are able to consume unlimited caffeine?

My understanding, beyond just the simple metabolism factor (some ppl metabolize it faster) is that some ppl have a mutation that makes the receptor caffeine binds to a "double node" so there's still room for adenosine to bind as well. So basically caffeine is less effective for ppl with this mutation. They can drink coffee and go straight to sleep.
