I made tuna crudo and sunomono (Japanese cucumber salad). Yes a bit over garnished but I love vegetables ๐๐ I just eyeball and taste as I go Ingredients (tuna crudo) - tuna - sesame oil or olive oil - yuzu champagne vinaigrette - lemon zest - jalopeno - microgreens - fried garlic - s&p - shallots - chives - lime juice - lemon juice - capers Ingredients (sunomono) - cucumbers - sugar - soy sauce - sesame seeds - salt - rice vinegar Slice up all your veggies and set aside. Salt the cucumbers and set aside to get crunchy. Mix wet ingredients for tuna crudo. Add dry ingredients except fried onions. Slice and plate tuna. Pour over mixture and arrange any veggies. Top with fried onions and lemon zest. Rinse cucumbers and marinate in the sugar, soy sauce, rice vinegar, salt, and sesame seeds. No cooking involved and just a cutting board, knife, and a grater for the lemon zest ๐

Vinegar is very well used in Japanese cuisine. I would add a small bowl of white rice ๐๐
