why do pastries make up like 90% of the food sold by coffee shops

I'm some countries it's expected that you dip the bread with coffee, as the sweetness of the pastry sweetens the coffee. Good coffee doesn't require sugar

The satisfaction of a pastry with coffee just adds to the experience... or the conspiracy theorists would say sugar addiction. Lol

Most can be eaten on the go and go well with coffee.
