Tasting session as a journey. We start with what they call breakfast: a croissant roll with chicorée pastry cream filling and a mimolette cheese sauce on the top. With that, we were served something that looks like an espresso but is actually a stout beer.

The next plate is the lunch in Brittany. So it involves buckwheat cooked like a rice pudding with caramelised apples and a buckwheat cracker. This is served with a millésime dry cider that took 7y to be refined using the champagne method.

Then 3 on 5 is the goûté (team time but french version). Waffles. But not ordinary waffles. It's sweet potato and coconut waffles with a lemon Chantilly cream with candied ginger. This is teamed with a alf sweet Vouvray made with the solera method (mixing years to adjust sugar level).

Of course, after the goûté we directly head to the apéro. 4 bits (from left to right): - wasabi pistachios - feuilleté with chorizo and raspberry. - parmesan cracker with a slice of parmesan on it - oignons confits on a chocolat cracker with anchovy. This is matched with a specialty from Dijon in France, the kir: blackcurrant sirup with Bourgogne aligoté.

And finally, the desert (1st pic on the thread): A pecan cake base with two chocolates: 85% with coffee, a 50% with smokey whiskey. A white chocolate on the top. On the side, a vanilla ice cream on a cracker. This is served with a fine tawny, Quinta do Tedo red porto.
