had a wild latte today made with beans from a roaster in Amsterdam called Dak. this particular roast (“banana split”) uses beans from Colombia and a mixed fermentation process, around 170hr with pineapple/banana microbes + yeast. the banana note is so real and vivid that it almost tastes like you added a flavoured syrup to your drink. mind-altering and delicious.

iiiiinteresting. some of my favorite beans to date have been yeast fermentations. would love to try a batch done like this with the addition of the microbes.
