had a wild latte today made with beans from a roaster in Amsterdam called Dak.

this particular roast (“banana split”) uses beans from Colombia and a mixed fermentation process, around 170hr with pineapple/banana microbes + yeast.

the banana note is so real and vivid that it almost tastes like you added a flavoured syrup to your drink. mind-altering and delicious.

yeah part of me is pulled in by the wild flavours but I could also see it getting old/repetitive, so maybe just a special treat vs. daily driver
