I love Potato Pie - it's peeled and thinly sliced potatoes fried in a large amount of vegetable oil. It differs from French fries only in the thickness of the strips, but it is very tasty, mmmmm....

Roasted with just rosemary, olive oil, and salt. Par boil them first then put them in the oven. Can finish off in the air-fryer for a super crisp finish. If you really want them crispy, put them in the freezer before putting them in the oven.

Cast iron baked fingerling potato. The easiest thing to make, they keep well, and if you cook them long enough they get nice and crispy.
