I had a revelation. I am never buying a mayonnaise again. Just made mayonnaise with boiled eggs, olive oil (grapeseed oil ok too) lemon. It is a delight. How did I not know this before. I live in illusion that it was complicated to make mayonnaise

Ideally with raw but I am afraid because of bacteria, so boiled eggs worked perfectly and consistency as a result was a bit thicker which is no harm. Taste wise was great

With boiled eggs?

I used to make some (or aïoli), but then with raw egg yolks.

I didn’t have free range eggs but normal from the supermarket but lemon was from near the house which was great and I used olive oil. I didn’t follow proportions like I never do but was overall aiming at approximate. It was a revelation, I am never buying mayonnaise again. I can’t believe that this is not more known to our known universe
