I had a revelation. I am never buying a mayonnaise again. Just made mayonnaise with boiled eggs, olive oil (grapeseed oil ok too) lemon. It is a delight. How did I not know this before. I live in illusion that it was complicated to make mayonnaise

With boiled eggs? That is a surprise. I used to make some (or aïoli), but then with raw egg yolks.

Ideally with raw but I am afraid because of bacteria, so boiled eggs worked perfectly and consistency as a result was a bit thicker which is no harm. Taste wise was great
