at least for the last 10 minutes or much longer if you want turn it on broil and heat from the top with the pan on the top shelf. are you just on bake heating from bottom?

- after cutting thinly, soak in cold water 30m-1h - dry thoroughly - coat them lightly in corn starch, around 1-2tsp per large sweet potato - once coated evenly (shake in bag or similar technique), add oil/seasoning before baking 425-450F as usual

Try adding a little more oil drizzle when you’re 30 min in and shake them around, also go higher end of temp range. Maybe try convection setting too if you’ve got it?

I wish I could find the reel, but one method used on yellow potatoes for a very crispy bake is boiling the dried and skinned potatoes, dropping them into cold water, then putting them in a pan with a fat/oil into the oven. Halfway through tossing them a bit more. Not sure it would work the same for sweet potatoes but might be a lead ¯\_(ツ)_/¯

Put them in water after peeling to stop them from browning But you have to sure they’re dry by patting with paper towels before you cook

soak them in water for 30 minutes and then dry them with a towel. this way you will rid them of some starch, making them more crispy
