What's the best way to do a mobile app UI/UX product walkthrough video? Simulator + QuickTime or Loom? Plug in the phone and record somehow? Record on phone and narrate after in post?

As an iOS dev I'd say record the simulator and do a voice over. Especially if you're presenting to non devs. I've realised the importance of the simulator 'feel' the hard way compared to showing it by compiling on a device.

iirc, you can hit "record screen" on the phone and it captures your voice as well - you'll probably want to be in DND mode to avoid notification popups

We usually did screen record, cut in premiere pro and do voiceover, or if it was recorded pre-production our entire ux flow was in adobe xd and you can record that flow as animation too but that depends what you use for your flow. Adobe xd is the bomb for ux imo

Mobile apps that use a side menu can always add there a navigation entry that leads to a tutorial screen, where you could use a combination of text + video to make a great tutorial. This is great for complex Apps. If the App is too simple and you add that, users might asume you think they are dumb, it is a catch 24.
