As a good Spaniard, I always enjoy the unparalleled pleasure of a good Iberian ham, that gastronomic treasure that is an essential part of our culture and tradition. There is nothing comparable to cutting thin slices of that jewel cured with patience and dedication, and then savor its silky texture and its intense flavor that evokes the essence of the dehesa. Iberian ham is not just a food, it is an experience that connects with our roots, with those moments shared with family or friends, where every bite awakens endless sensations. Mirza Ghasemi is a simple and delicious Iranian dish with an attractive appearance. Ingredients: 4 eggplants 3 tomatoes 3 eggs 4 garlic cloves Salt, pepper, turmeric Oil Instructions: 1. Roast the eggplants over an open flame or in the oven, peel, and mash them. 2. Prepare the tomatoes by peeling and chopping them. 3. Fry the garlic in some oil until golden. 4. Add the mashed eggplants and tomatoes to the garlic. Season with salt, pepper, and turmeric. Cook until the liquid evaporates. 5. Add beaten eggs and mix until fully cooked. 6. Serve in a dish, garnish with herbs, and enjoy with bread or rice.

Recipe in Halwa (or Barfi), a sweet made with chickpea lentils, ghee, sugar, powder milk & some secrat masala. Ingredients: 1/2 cup chickpea lentils 1/2 cup ghee (clarified butter) 3/4 cup sugar 1/2 cup water or milk 1/4 teaspoon cardamom powder or skip) A pinch of saffron (optional) 2 tablespoons chopped nuts (almonds, cashews, or pistachios) Instructions: Heat ghee in a pan over medium heat. Add chickpea lentils,s paste and roast it. Cook until it turns golden brown (about 10 minutes). Prepare the sugar syrup: In a separate saucepan, mix sugar and water/milk. Heat until the sugar dissolves completely, and the mixture comes to a gentle boil. Add cardamom powder and saffron (if using). Stir well and set aside. Slowly pour the sugar syrup into the roasted gram flour while stirring continuously. Cook on low heat until the mixture thickens and starts leaving the sides of the pan. Set and cool: Pour the mixture into a greased plate or tray. Cut into pieces & enjoy it🤍 @mehedi1976.eth @malvo
