... and they're still going strong! Lovely! Kale is one of those rare winter treats that we can keep harvesting throughout the cold and dark months. Got to appreciate how tough they are.

And so tasty! The dark is getting better but the cold is still strong here. I'm also "harvesting" yummy wild greens, mostly chickweed and dead nettle growing on beds that are empty for the winter. I made a delicious lasagna, substituting them for the spinach that recipe called for.

Oh wow, so you substitute nettle for spinach? That's amazing, I have never tried nettles, but I've heard so much about how they can be cooked in various ways.

I can't get nettle leaves at this time, but the so-called "dead nettles" (Lamium) are still going. They have an earthy taste, and the chickweed tastes more like cress, they go well together. I have nettle seeds I collected and they taste amazing, I sprinkle some on my breakfast bowl.
