And so tasty! The dark is getting better but the cold is still strong here. I'm also "harvesting" yummy wild greens, mostly chickweed and dead nettle growing on beds that are empty for the winter. I made a delicious lasagna, substituting them for the spinach that recipe called for.

... and they're still going strong! Lovely!

Kale is one of those rare winter treats that we can keep harvesting throughout the cold and dark months. Got to appreciate how tough they are.

That kale looks amazing!! I love that it will take the snow, use its water, and bounce back as soon as the sun warms it up.

It does feel good to have something tasty to harvest in the thick of winter. I'm grateful for kale. 💚
