Kale is one of those rare winter treats that we can keep harvesting throughout the cold and dark months. Got to appreciate how tough they are.

Yeah man, they grow all winter long. We have been harvesting kale all winter, here and there. When everything else is dormant and dead, it's nice to have something green and edible still cropping!

I didn't know this. My wife loves kale. Is that lacinato @y0b ?

Oh wow, so you substitute nettle for spinach? That's amazing, I have never tried nettles, but I've heard so much about how they can be cooked in various ways.

And so tasty! The dark is getting better but the cold is still strong here. I'm also "harvesting" yummy wild greens, mostly chickweed and dead nettle growing on beds that are empty for the winter. I made a delicious lasagna, substituting them for the spinach that recipe called for.
