Is the idea to fill the other three days with two easy runs and one rest? I assume warm up and cool down also to be added?

Yeah WU and CD should be added to every workout in the plan. Since everyone has different methods/distances to warm up. I left it to the runner. The plan on 4 days involves 3 days of resting. But if you want to run 5, you can duplicate one of the “easy” day of the week.
