1. I’m too old and have not had the requisite exits to not be taking a paycheck in the pre-seed/seed stage 2. VC money influences decision-making and changes the way people run businesses (for better and for worse) 3. Can’t run it on the side and until my time at Pinata is up, everything else is a side gig

Aligned with 2 and 3. Re 1 - I'd go trad VC route if the existing market was big enough (in crypto it isn't). I think a lot about Anu's One Round Wonder, think a 10X off of a 250k-500k round is p doable, so I still think about that as a route. https://www.workingtheorys.com/p/one-round-wonder

ugh, paywalled now. TLDR as I remember it is what I said, "your target revenue needs to be 10x whatever you raise, so look at your business, determine what's feasible and work backwards.
