they are so good i changed my mind about beans when i tried them cooked from dry, and from freshly dried beans. almost any shelling bean is magnificent, and then there are some very good ones if from a can, they're pretty meh

cooked form dry, never had a dish like that, usually what i get are dried beans soaked overnight, then cooked in soup or stir fried

yeah i think the chinese (and possibly also the jp and kr) way is to not treat the intact bean as an object worth careful cooking in itself. it gets cooked with things or turned into pastes — all fine, but the bean in itself can be excellent.
