they are so good i changed my mind about beans when i tried them cooked from dry, and from freshly dried beans. almost any shelling bean is magnificent, and then there are some very good ones if from a can, they're pretty meh

cooked form dry, never had a dish like that, usually what i get are dried beans soaked overnight, then cooked in soup or stir fried

i recommend getting very good freshly dried beans, then soaking them and cooking them in just water and a bit of oil, very slowly. i don't have good sources in SEA yet but i usually get my beans from rancho gordo when i pass through US or, if in sta monica, i get them fresh dried from 2 peas in a pod
