First attempt at carrot halwa. Not bad, not great. 250g grated carrot sautéed briefly in ghee  simmered with 1/3 can condensed milk. Plus 1/4 tsp cardomim powder. Garnished with 1/4 cup cashews and raisins roasted in ghee.

Really needs the sweeter red carrots that I’ve rarely seen in the US but not bad.

Plenty of sweet carrots in the US, just not usually at a grocer where the less sweet imperator variety grown in CA dominates.

Europe has better flavor through the Nantes varieties, which are often favored by smaller growers here as well.

Cold nights > sweeter carrots.
