Zippy's is a restaurant chain that was founded back in 1966 and a staple here locally. When I moved away this is the stuff that I missed the most. Plate lunches, traditionally a variety of meat, 2 scoops rice, a scoop of Macaroni salad are part of our local culture. This is pic is something called a Zip Pac, teri beef, spam, fried mahi mahi and fried chicken on a bed of rice and furikake. A perfect reflection of home because of the hodgepodge of ethnic influences. What's the dish/dishes in your hometown that you crave da most?

When we moved away from the West Coast, I missed the Hawaiian plate lunches *so* much. One of them was actually called Hodge Podge :D Thankfully we've got Hawaiian Bros now, which was started by the sons of one of the spots in Eugene.

I'm not surprised about Eugene U of O and OSU have huge Hawaii clubs and lots of people decide to settle there.

For sure. Lots of Japanese (Asian food/influence was excellent, too) & Pacific Islanders.
