Never thought I’d think this but better than any butter out there is - richer flavor profile than American butter - better salt to fat balance for baking than Irish or French butter - and I get to eat/make pastries that are more accessible for everyone and less damning on the planet

I will try this for baking. I made a mistake trying Irish butter for that one year. Won't do it again.

It’s wonderful to slather and eat and melt for cooking but I found it didn’t work well in cookies etc. I think it works well in croissants but I don’t have the patience to make those.

Gotta love all the complicated French pastries, that’s why I leave those for the bakeries… much easier to grab a cup of coffee and a croissant or find some macarons then toil away with them
