- richer flavor profile than American butter 
- better salt to fat balance for baking than Irish or French butter 
- and I get to eat/make pastries that are more accessible for everyone and less damning on the planet

I will try this for baking. I made a mistake trying Irish butter for that one year. Won't do it again.
