I love to use my sous vide for filets and scallops - scallops are especially nice and easy

@giuseppe Interesting that you use the sous vide for fattier cuts like pork butt and short rib. I've seen that done in restaurants, but don't personally use my sous vide for those cuts at home. Usually I'd go for a braise or if time permits use the smoker. You've inspired me to consider trying short ribs in the sous vide to compare the result
