@giuseppe Interesting that you use the sous vide for fattier cuts like pork butt and short rib. I've seen that done in restaurants, but don't personally use my sous vide for those cuts at home. Usually I'd go for a braise or if time permits use the smoker. You've inspired me to consider trying short ribs in the sous vide to compare the result

hi there, I have not used sous vide that much in the past few years but wanted to share my notes from 2014. I do think you will enjoy the shortribs, not sure what i wrote down but its nice to do 36 hours at 59 celcius. Finish on the grill over wood if you can. Also another fun cut is pork collar, you can follow the pork butt cook time for that. Sous vide is a little more common in restaurants than home cooking imo for quality control or just to keep things cooking when people go home or in between shifts
