Resting cookie dough is known to hydrate the flour, deepen flavors, and enhance texture. While Iā€™ve confirmed that 72 hours beats 24 in most cases, I want to quantify *just* how much of a difference it makes with this specific dough. Current Observations ā€¢ Turning the tray at the 7-minute mark ensures an even bakeā€”this has been universal across tests. ā€¢ The current cookie batter is noticeably fluffier and thicker, while other 72-hour recipes Iā€™ve made result in thinner, gooier cookies. This experiment will help me determine which style works best. The End Goal Beyond perfecting flavor and texture, Iā€™m thinking about giftability, ease of transport, and whether I can eventually create a healthier version that rivals the sugary, buttery classics.
