Today I did miso butter scallops and air fried soy brussel sprouts (20 min) Ingredients Brussel sprouts Brussel sprouts Soy Honey Lao Gan ma chili oil (optional) Garlic Ginger Sesame oil Cut brussel sprouts in half and then mix all together. You can blanch then air fry them if you want to be extra but I just threw it in the air fryer. Ingredients miso butter scallops Scallops Butter Sesame oil Shallots White wine S&P Pat scallops dry, then S&P. Pan fry 2 min on each side and remove from high heat. Lower heat, add in wine to deglaze, then butter, miso, and shallots to caramelize.

I like how the glaze on those scallops didn't burn, esp with the honey in the pan. Looks like you nailed it.

I have a bias for undercooking my food because I absolutely hate anything overcooked. But usually my sense of undercooking turns into perfectly cooked 😂

This is especially true with something as delicate as scallops or salmon, where it will cook out of the pan anyway.
