I would say just get a good cast iron pan. I also have a blue carbon Definitely donβt get anything that says non-stick CC @myles-cooks

I personally own a blue carbon steel and a stainless steel. Love both and use both often. For carbon I have a Made In and for stainless a De Buyer.
