What's the best ultra-simple app for note-taking on your phone?

I just want to click the app and start making a note, then organize it.

Have you tried minimal.app by chance? I like it, been using since TestFlight. Not as fully featured as Bear, but offers a handful of functions I find pretty indispensable at this point.
