I’m watching a very skilled priest perform the Hocho-shiki also known as the “Knife Ceremony”. It’s a traditional Japanese ritual where a highly skilled chef—often a priest or someone with ceremonial training—fillets a fish without touching it with their hands, using only a knife and chopsticks to maintain the rituals purity. The act is a sacred offering to the kami (Shinto deities), expressing gratitude and reverence for nature and life. It honors the life of the fish and reflects the Shinto belief in the sacredness of natural elements. The ritual dates back over 1,000 years, linked to courtly etiquette during the Heian period. He’s wearing full Heian gear, it took him 25 minutes, and I do not think I could do this at all. I need to feel a fish with my hands to feel the bones. This skill this takes is crazy.

Wow this is neat. I’ve filleted so many salmon..I can’t imagine using chopsticks and a knife only!! Personally I always feel bad for the fish when I catch and fillet. Interesting Japan has deep respect for fish. I love it.
