Cashew nuts are kidney-shaped seeds derived from the cashew tree (Anacardium occidentale), a tropical evergreen native to Brazil but now widely cultivated in India, Vietnam, Nigeria, and other warm regions. They grow at the base of the cashew apple, a pseudo-fruit that is also edible but highly perishable.
