The industry is so consolidated, the margins are so minimal - that the big companies need to fight for anything that prevents added costs. Industrial pork is depressing AF, and tastes like nada Unfortunately the market pits pork v beef v chicken. And the chicken industry has led the race to the bottom price wise for 3-4 decades. It’s depressing. Yet our society can afford decent pork on scale.
