starting to find a lot of joy making recipes from cookbooks over searching on google itβs a lot easier when i know the chef/author has a similar palette/cooking style that i like vs seo optimized recipes i also really appreciate the chefs notes about the dish and some of the cultural significance of it

currently looking through sheldon simeons cookbook. made his beef stew last week. gonna make some charred cabbage with shrimp paste compound butter, lime/basil chinese eggplant, and maybe some kewpie mayo/sriracha brussel sprouts.

the cook book recipe calls for the roast brussels to be put on top of the layer of kewpie sriracha mayo. but im thinking of it more like a dipping sauce/drizzle on top of. i think it also calls for some fried shallots + furikake sprinkled on top for texture/umami flavor
