You know why it's overpriced? Because they fly in whole, wild fish from tsukiji daily, butcher them, dry age some parts, make their own dashi, and make everything else from scratch, down to the yuzu koshu. Traditional preparation techniques that are time and labor intensive … TL;DR - you get what you pay for ser

Good to know — def feels less overpriced with that context If the portion were 20% larger, I probably wouldn’t have even thought it was overpriced in the first place Seems like you’re deep in it! What are your favorite spots in ny?

I'm a huge Japanese food maxi and the good ones are $$$ because they do it right… When you dig into the fishing industry it makes a ton of sense why you pay top dollar for wild, line caught fish. Funny you flagged portion size, in Japan it's a cultural difference to not eat until you're stuffed, but simply satisfied and not hungry (see link). In terms of noms, what sort of stuff are you into? I've got my curated list of top Brooklyn spots, but happy to call out a few, if helpful ser https://maps.app.goo.gl/c4nK7bgQiUdYwAK59 https://www.cnbc.com/2020/11/10/japanese-80-percent-diet-rule-can-help-you-live-longer-says-longevity-expert.html

Appreciate it! I'll take a look at your map lol my girlfriend is half Japanese and tells me this all the time — I’m just a hungry boi, unfortunately My common thread across favorites is authenticity and no pretentiousness. I'm from Spain, and my favorite spots are always super simple, e.g. grilled fish, grilled veggies, tortilla — all about super high-quality ingredients and mastering the basics. In nyc my absolute favorite is Raku. I also love Commerce Inn, Thai Diner, Le Gamin, and some of the more premium Japanese spots (Yasuda, Shuko, Shota, Mumi, Torien)
