You know why it's overpriced? Because they fly in whole, wild fish from tsukiji daily, butcher them, dry age some parts, make their own dashi, and make everything else from scratch, down to the yuzu koshu. Good to know — def feels less overpriced with that context If the portion were 20% larger, I probably wouldn’t have even thought it was overpriced in the first place Seems like you’re deep in it! What are your favorite spots in ny?

I'm a huge Japanese food maxi and the good ones are $$$ because they do it right… When you dig into the fishing industry it makes a ton of sense why you pay top dollar for wild, line caught fish. Funny you flagged portion size, in Japan it's a cultural difference to not eat until you're stuffed, but simply satisfied and not hungry (see link). In terms of noms, what sort of stuff are you into?
