We normally run away from or poke fun at legacy code and how awful it can be to work with, but I think there's a very real, valuable, and rare skill to taking a shitty legacy codebase and turning it into something great.

True. Pretty rare though, most code is just bad because building software is a very difficult thing to do.

If you can do it at scale consider a new career in converting old mainframes from C/COBOL to Python/JS
