Ingredients and Preparation:
The main ingredients include catfish or goat meat, yam (or yam powder) as a thickener, uziza leaves, and spices like uda seeds and ogiri (fermented African seed). Traditional spices give it a distinct aroma and taste.
To prepare:
Boil the Meat/Fish: Season the meat or fish and cook until tender.
Add Yam as a Thickener: Boiled yam is mashed and added to thicken the soup.
Seasoning and Spices: Add ground uda seeds, ogiri, and pepper, and let the flavors combine.
Finish with Uziza Leaves: Add chopped uziza leaves for a spicy, aromatic touch.
