grilled zucchini is the best type of zucchini…. a little oil, salt, pepper, and garlic is the best

Slice, salt, let sit 30 minutes. Thoroughly dry. (They aren’t dry enough!) Then oil. Grill without cover until both sides crispy but inside soft. Serve with homemade aioli alongside protein. Amazing summer meal.

looks amazing. thanks for the recipe! just showed my wife and she commented that we just bought some zucchini, so I know what I’ll be adding to the menu this week. If you don’t mind sharing - Is there anything special that you use in the aioli recipe? I usually use mayo, garlic and lemon juice (salt and pepper to taste)

Looks so good. I might be wrong but putting salt on zucchini draws out moisture to the surface, which is good for a nice crispy char, but is it still juicy inside?

i always oiled them first but now oil them w xvirgin olive oil after the grilling feel like they come out even better, softer on the inside and more crispyjuicy on the outside
