Slice, salt, let sit 30 minutes. Thoroughly dry. (They aren’t dry enough!) Then oil. Grill without cover until both sides crispy but inside soft. Serve with homemade aioli alongside protein. Amazing summer meal.

looks amazing. thanks for the recipe! just showed my wife and she commented that we just bought some zucchini, so I know what I’ll be adding to the menu this week. If you don’t mind sharing - Is there anything special that you use in the aioli recipe? I usually use mayo, garlic and lemon juice (salt and pepper to taste)

Egg yolk, dash Dijon, white wine vinegar, salt, clove of garlic with a microplane. Put towel under mixing bowl so it stays steady. Drip olive oil small at first while whisking. As you get more volume you can add more olive oil at a time. Roughly 1 cup. Traditional recipe
